Food for thought
I realised nowadays many people taking up courses in cooking, the journey to becoming a renown chef.
One more thing i realised is all the food they cook are fine dining dishes. Then who's gonna cook the simple yet appreciated stuff?
Roti canai. Char kuey teow. Rojak. Bak kut teh!
Professionalism. Boo.

I always say that people are into design-cuisine nowadays. Awfully complicated dishes with no food at all with horrible designs that are not tempting at all served in a huge white plate. I'd rather eat bread than one of those dishes...

No! I'm a chef. I cook wonderful, tasty food. I DO like it to 'look' good. We learn in cooking school that people eat with their eyes as well as their mouths. I also want it to SMELL wonderful, and really, the way it looks and the way it smells IS important. But, I promise, that if you like good, wholesome food, you will love my food. That is, if you like seafood, and handmade pastas and sauces with flavours, and perfectly cooked meats. Maybe it wouldn't appeal to you, as it is different from the Oriental styles of cooking, but I love ALL food, not limited to only one location. That's one of the important qualities of a REAL food lover, that they not hate foods that they find unusual, but be willing to try everything at least once.
